Dried fruit, in its various forms, is often an ingredient that is left on the back of the pantry shelf. You bought it for a recipe that you once intended to make, or maybe you still have the leftovers from a recipe you once made.

Whatever the case, dried apricots, prunes, dates, figs, raisins, and sultanas can be used in lots of different recipes that go beyond the once-a-year fruit cake.  Lots of holiday recipes call for dried fruits, and they make great ingredients in healthy granola bars and other energy snacks.

Dates are often used as a binder and make awesome vegan caramel.  Dried fruit mixes are great as a simple sweet snack and can be tossed into trail mixes for a little natural sugar.
